Huoshan Huang Ya Yellow Tea
Large, lovingly hand-crafted leaves and downy silver buds make up this attractive "yellow bud" tea from Anhui province, one of the few rare yellow teas currently available. Yellow teas are produced like a standard "pan-fired" green tea, but in the final steps of pan-firing, the leaves are covered or wrapped in paper. This further reduces the grassiness in some green teas, and causes the leaves to change from a darker-green to a yellowish-green color. This Huo Shan Huang Ya is a fascinating tea, notable for the deeply full-bodied character of its infusion. GROWING REGION
Anhui, China: Anhui is a province in southeastern China, widely known for producing black teas in the late 1800s. A number of excellent green teas grow here as well as the world renowned qi men (or Keemun) black tea.
BREWING INSTRUCTIONS
To prepare Huo Shan Huang Ya, we recommend infusion in a traditional covered steeping cup or “Gaiwan” (although a regular teapot is also serviceable). Place 3-5 grams of tea into a pre-warmed cup/Gaiwan and fill it with hot (but not boiling) water. Infuse for 1 to 2 minutes, cover, and drink or pour out into tasting cups. Huo Shan Huang Ya may be brewed multiple times by gradually increasing the steeping time and water temperature. Always adjust the steeping time, quantity of leaves used, and steeping temperature according to your personal preferences.
